French high-carbon alloy steel, semi-stainless, often used in high-end kitchen knives.
Z160 is a French high-carbon alloy steel, full name: Z 160 CDV 12. It is semi-stainless (with corrosion resistance slightly better than D2), and features an optimal hardness of 58-60 HRC, although some companies push it up to 62 HRC. Regarding its chemical composition, in addition to the obvious carbon (1.25-1.65%) and chromium (11-13%), it contains a whole range of alloying elements: molybdenum, vanadium, manganese, silicon, nickel, copper, and tungsten. The most critical characteristic of this steel for knifemakers is its outstanding wear resistance. It is frequently used in high-end kitchen knives.
