Z160 is a French high-carbon alloy steel, full name: Z 160 CDV 12. It is semi-stainless, with corrosion resistance slightly better than D2. Its optimal hardness is 58-60 HRC, although some companies harden it to 62 HRC. As for its chemical composition, in addition to carbon (1.25-1.65%) and chromium (11-13%), it features a variety of alloying elements: molybdenum, vanadium, manganese, silicon, nickel, copper, and tungsten. For knifemakers, the most significant feature of this steel is its above-average wear resistance. It is often used in high-end kitchen knives.
