N690 is a high-alloy stainless tool steel with the addition of cobalt, molybdenum, and vanadium. It is produced by the Austrian company Böhler Uddeholm. It is durable, corrosion-resistant, and has good edge retention. The optimal hardness for this steel is in the 58-61 HRC range, although some companies push it to 62 HRC. An important characteristic of this steel is its high resistance to lateral stress, which makes it particularly useful in the production of longer knives.
