A tandoor (tandyr) is a portable clay oven used for baking meat, bread, and dough by roasting it inside a chamber heated by burning wood. The guiding principle behind this invention is the maximum efficiency of fuel utilization, which is of paramount importance in steppe conditions where wood can be scarce. In Poland and the regions of northern and central Russia, forests and wood have always been abundant; therefore, tandoors were introduced to Rus' through nomadic peoples from the south.
