Description
This H12MF steel blade (Cyrillic: Х12МФ) is intended for an Asian Santoku kitchen knife. H12MF steel, the Western equivalent of which is D2, is an excellent material for knives. The blade has a hardness of 59-60 HRC. Just like D2, it is not fully stainless but semi-stainless steel, which with minimal care offers sufficient corrosion resistance for comfortable use.
Forged, with a raw, unpolished surface above the grind line (not sharpened).
